I was in Rome at the most amazing restaurant and was served ice-cream with radishes in it - it sparked a total obsession and I had to create my own version! You will be so surprised at the deliciousness of this unusual combo - prepare to have your perspective on radishes transformed! Tash x
200ml rice milk
½ tsp xantham gum
- Top and tail the radishes and add to a blender with the raspberries, agave, rice milk and a tiny pinch of salt and blend until smooth. Add the xantham gum and blend again until the mixture begins to thicken.
- Place the mixture into an ice-cream maker or a Tupperware container and stir every 30 minutes to stop it from crystalising.
- Serve with fresh berries and mint leaves.
