Raw Coconut Fudge

These are real little winners that will impress at any dinner party. Not only that but they are also dangerously good if kept in the fridge as a little treat every now and then. But remember – these are to be enjoyed as part of your 30% & not every day!


  • 425g coconut manna
  • 1 cup rice syrup
  • 1/2 cup sweet freedom or agave


  1. When you get your coconut manna it will be quite solid in the jar. To soften it up, just place it in a jar of boiling water with the lid on for about 10 minutes. It should then soften enough for you to get it out.
  2. Once softened, remove from the jar and place in a high speed blender (Vitamix is the best blender) with your sweet freedom and rice syrup. Blend up until it becomes a thick consistency.
  3. Get a ice tray or chocolate moulds and push the fudge into the moulds, then put them into the fridge for about 45 minutes until set. Enjoy - 1 at a time!!!
