Raw Coconut Fudge
These are real little winners that will impress at any dinner party. Not only that but they are also dangerously good if kept in the fridge as a little treat every now and then. But remember – these are to be enjoyed as part of your 30% & not every day!
- 425g coconut manna
- 1 cup rice syrup
- 1/2 cup sweet freedom or agave
- When you get your coconut manna it will be quite solid in the jar. To soften it up, just place it in a jar of boiling water with the lid on for about 10 minutes. It should then soften enough for you to get it out.
- Once softened, remove from the jar and place in a high speed blender (Vitamix is the best blender) with your sweet freedom and rice syrup. Blend up until it becomes a thick consistency.
- Get a ice tray or chocolate moulds and push the fudge into the moulds, then put them into the fridge for about 45 minutes until set. Enjoy - 1 at a time!!!
