Serves: 2 | Prep time: 5 minutes | Cooking time: 0 minutes | Cooking Skills: Simple
"Everyone needs some good salad dressing to jazz up your lunch or dinner. I always say that you can have the same ingredients in a salad every day, but if you change the dressing, it feels like a new and different meal. This would also be lovely drizzled over roasted vegetables." Tash x
2 large vine tomatoes
1/4 cup balsamic
1/3 cup olive oil
Juice and zest of one large orange
- Pre-heat your oven to 175°C
- Quarter your tomatoes and place them on a baking tray with 1/2 tsp sunflower oil, and roast them for 20 minutes.
- Once they have cooled a little, remove the skins from the tomatoes.
- Put all ingredients into a blender and blitz until smooth. If you don't have a blender, mash the tomatoes in a bowl as much as you can, before combining them with the rest of the ingredients. Lastly, push the mixture through a sieve to get rid of any lumps. Enjoy!
