Apricot & Chia Protein Balls

Serves: 12 balls | Prep time: 10 minutes | Re-fridgeration time: 60 minutes | Cooking Skills: Simple

"These make the most delicious protein snack. I love having one after a big workout. They also keep really well in the fridge. Chia seeds are said to be a great source of slow releasing energy. In south America, where they originated from; when the Aztecs went to battle, they would take a pouch of chia seeds with them for energy. This didn't weigh them down like other food does."  Tash x


130g unsulfured dried apricots
2 tbsp. cashew butter
2 tbsp. melted coconut oil
3 tbsp. chia seeds (plus more for rolling)
80g ground almonds
    1. In a food processor, pulse together the apricots, cashew butter and coconut oil until it turns to a rough paste. Next add the ground almonds and chia seeds and pulse again until combined.
    2. Roll the mixture into balls about the size of a ping pong ball. You can then roll them in the additional chia seeds to coat them. Place them into the fridge for 1-2 hours to set, keeping them there until you want to eat them.
