Zesty Pea And Parsley Fritters

"A very quick recipe to make and best served alongside a leafy green salad with the zingy dressing. Feel free to experiment with the herbs, I personally love the combination of lime and parsley." Tash x

 

Ingredients

For The Fritters:

2 eggs
1 tbsp chia seeds
60g peas (fresh podded peas are best)
170g edamame beans podded
3 heaped tbsp. rice flour
4g chopped parsley
Zest of 1 lime
Pinch of Himalayan salt
2 tbsp coconut oil

    For The Dressing:

    3tbsp chia or olive oil
    Juice of 1 lime
    1 tbsp agave
    1 inch of finely chopped chilli
      Instructions
      1. Beat the eggs into a bowl, add the chia seeds and leave to soak for 5 minutes. Add the peas, edamame beans, salt, rice flour, parsley, lime zest and mix together.
      2. Heat 1tsp at a time of coconut oil in a frying pan and dollop 2tbsp of the mixture into a hot pan. Leave to fry for 2 minutes until golden then flip over and fry the other side. Repeat this until you have finished the mixture.
      3. Make the dressing by putting all ingredients into a glass and whisk together. Serve with the fritters and a green salad.
