Peach, Cashew & Bee Pollen Smoothie

Bee pollen has this lovely, sweet crunch - not only that, but it is a fantastic source of protein and vitamin B, and also contains enzymes that help to improve digestion.This is quite a rich smoothie, but will pick you up when you are down, and need that extra energy boost. Sometimes, if I am a bit bored of porridge and oat based breakfasts, and I know I have a big day ahead, then I blitz up one of these, and it sees me through.
1 large ripe peach, stone removed
1/2 a banana, peeled
120ml coconut milk
1tbsp cashew butter (or almond butter)
60ml filtered water
1tsp chia seeds
1tsp bee pollen
- Put all of the ingredients, except for the bee pollen into a high speed blender and blitz until smooth. Transfer to a glass and stir through the bee pollen and enjoy.
