Peach, Cashew & Bee Pollen Smoothie

Bee pollen has this lovely, sweet crunch - not only that, but it is a fantastic source of protein and vitamin B, and also contains enzymes that help to improve digestion.This is quite a rich smoothie, but will pick you up when you are down, and need that extra energy boost. Sometimes, if I am a bit bored of porridge and oat based breakfasts, and I know I have a big day ahead, then I blitz up one of these, and it sees me through.

1 large ripe peach, stone removed
1/2 a banana, peeled
120ml coconut milk
1tbsp cashew butter (or almond butter)
60ml filtered water
1tsp chia seeds
1tsp bee pollen

    1. Put all of the ingredients, except for the bee pollen into a high speed blender and blitz until smooth. Transfer to a glass and stir through the bee pollen and enjoy.
