Spinach & Walnut Pesto

Pesto is one of the best ways to jazz up your vegetables, and by adding walnuts to this recipe, you are delivering the body with a fantastic dose of protein and omega rich brain food. If you make a big batch and freeze in ice cube trays so that in case of a hunger emergency you can just pop them out and heat it up and add to pasta, rice or quinoa for a more nutrient rich meal."  Tash x


70g spinach
15g parsley
100g walnuts
4tbsp chia or olive oil
Pinch himalayan pink salt
1tsp sumac
1tbsp nutritional yeast


    1. Put all the ingredients into a blender and blend until a rough texture.
    2. Serve with pasta, crudités, spread onto pizza, in your sandwich, toppings your veg, or however you like!
