Apple Fritters

"The perfect Bonfire Night treat.  This is the autumnal go to recipe for a sweet breakfast or a dessert, kids love them too. You can also try this with pears and plums as well which is a nice seasonal alternative."  Tash x

Ingredients

160g thinly sliced apple
½ tsp ground cinnamon
¼ tsp ground ginger
3 tbsp water
50g rice flour
1 tbsp coconut oil
2 eggs
2 tbsp agave syrup
    Instructions
    1. In a frying pan place the apple, cinnamon, ground ginger and water and leave on a medium heat for 2 minutes to let the apples soften - careful not to take them too far though as they need to retain some bite.
    2. Take off the heat and put into a bowl to cool. Once cool add the beaten eggs and rice flour to the apples and combine.
    3. In a frying pan heat 1 tbsp coconut oil and dollop in a large serving spoon of mixture into the pan. Leave to brown on one side - this should take 1-2 minutes depending how hot your pan is. Then flip it over and brown the other side. Repeat this until all the mixture is gone – this should make 3-4 fritters.
    4. Drizzle with agave syrup, sprinkle with cinnamon and serve.

    Similar question to the one above. I don’t have rice flour or agave syrup but would love to give these a go today. Are there any ‘traditional’ ingredients I could substitute them for until I can get my hands on the original ingredients please?

    These apple fritters sound so delicious! Would coconut flour be ok instead of rice flour and maple syrup instead of agave?
