Asparagus Dippy Egg

I love this sophisticated take on a childhood favourite - replacing buttery toast with asparagus is such a fun way to get in extra greens and roasted asparagus has such a satisfying snap to it, beats bread every time!
6 spears of asparagus
1tsp sunflower oil
- Pre-heat oven to 180deg fan
- Drizzle asparagus with sunflower oil and salt and bake for 10 minutes till soft
- Boil the water and put the eggs in for 6 minutes.
- Take out and put into an egg cup and dip the asparagus into the eggs.
