Tempeh Stir Fry
Tempeh is a fantastic source of protein, and tastes a whole lot better than tofu! It has a great texture, and is brilliant in stir fry's and stews. It has the power to turn any #meatfreemonday into a taste bud party – even for meat eaters!
2cm cubed piece of ginger, finely grated
1 large clove of garlic, finely chopped
1tsp coconut oil
1tsp ground coriander
2 pak choi
zest 1 lime
5g fresh coriander
- Melt the coconut oil in a large pan and add the grated ginger, chopped garlic, ground coriander and leave to sauté for 1-2 minutes.
- Add ¼ cup of water and the tamari with the beans, broccoli and pak choi. Simmer for 3 minutes with the lid on.
- Add the tempeh with the lime juice for a further 2 minutes with the lid off.
- Serve with the lime zest and cashews and chopped coriander.
