Almond Milk Poached Pears
Serves 2 | Cooking Time – 10 minutes | Skill – Simple
This is such a deliciously light breakfast for Summer mornings & kids love it too. I adore the combination of those almond and pear flavours, while pears sit higher than most other fruits on the alkaline scale so you get that feeling of indulgence whilst nourishing your body. Tash x
1tbsp coconut oil
1 pear, quartered
½ a cup (120ml) of almond milk
1 star anise
1tbsp mint, roughly chopped
- Melt the coconut oil in a frying pan. Once melted add the pears to the pan and cook evenly on each side until they start to turn golden brown. This should take 2-3 minutes on each side.
- In a separate saucepan, heat the almond milk with the star anise until it starts to simmer.
- Add the chopped mint and leave to infuse for a minute or two.
- Place the pears into a bowl, remove the star anise from the milk and pour over the pears. Enjoy on its own or over a bowl of gluten free porridge.
