Mashed Sweet Potatoes

Prep time: 10 minutes | Cooking time: 5 minutes | Skill: Simple

380g sweet potato, peeled and cut into evenly sized cubes

1 tbsp coconut oil

1 tbsp nutritional yeast

1 tbsp tahini

3 tbsp water

Juice of 1/2 a lemon

5g chopped parsley



  1. Steam your sweet potatoes in a pan for around 10 minutes or until soft.
  2. Transfer the sweet potato to a bowl and roughly mash.
  3. Stir in the nutritional yeast and coconut oil.
  4. In a glass, whisk together your tahini, lemon juice and water until thick and creamy and then stir through the potatoes.
  5. Garnish with parsley.
