Acai Chia Pot

If you can get your hands on frozen acai pulp online it really is the most delicious option rather than the freeze dried powder.

On its own blended up with a banana is like ready made ice-cream. Chia seeds are definitely an acquired taste but in this recipe are very moreish!

Ingredients

50g chia seeds

180ml rice milk

½ tsp vanilla essence

170g frozen berries

70g acai frozen pulp

1 banana

100ml rice milk

Method

  • Put the chia seeds, rice milk and vanilla essence in a bowl and soak for 2-3 hours or, ideally, overnight.
  • Make the acai frozen cookie by putting the acai, frozen berries, 100ml rice milk and banana into a blender and blend until a smoothie thick texture.
  • To serve, layer the chia pudding and acai and top with frozen berries and/or desiccated coconut.
