Almond Milk Poached Pears

This is such a deliciously light breakfast for a winters morning and kids love it too.

 

I adore the combination of those almond and pear flavours, added mint adds a summery feeling while still warming you up first thing. Try adding different flavours to the milk like cinnamon or nutmeg for a variation.

Ingredients

1tbsp coconut oil

1 pear, quartered

½ a cup (120ml) of almond milk

1-star anise

1tbsp mint, roughly chopped

Method

  1. Melt the coconut oil in a frying pan. Once melted add the pears to the pan and cook evenly on each side until they start to turn golden brown. This should take 2-3 minutes on each side.
  2. In a separate saucepan, heat the almond milk with the star anise until it starts to simmer.
  3. Add the chopped mint and leave to infuse for a minute or two.
  4. Place the pears into a bowl, remove the star anise from the milk and pour over the pears. Enjoy on its own or over a bowl of gluten free porridge.
