Asparagus Dippy Egg

I love this sophisticated take on a childhood favourite!

Replacing buttery toast with asparagus is such a fun way to get in extra greens and roasted asparagus has such a wonderful flavour to it.

This is a great post workout recipe from our Green and Lean plan. You can even get the kids involved in this one!

Ingredients

2 eggs
6 spears of asparagus
1tsp sunflower oil
Himalayan salt

Method

Pre-heat oven to 180deg fan

Drizzle asparagus with sunflower oil and salt and bake for 10 minutes till soft

Boil the water and put the eggs in for 6 minutes.

Take out and put into an egg cup and dip the asparagus into the eggs.
