Feta Roasted Radish Salad

Ingredients

170g radishes
1 large sprig of rosemary
2 tsp sesame or sunflower oil
¼ tsp black pepper
1 packet of feta
10g parsley
1 lemon
50g cooked brown rice or quinoa
2 tbsp tahini
4 tbsp water
½ lemon juice
pinch salt

Method

Preheat oven to 170deg

  1. Put the radishes on a baking tray and drizzle with oil and pinch of pink salt. Put in the oven for 20 minutes or until soft.
  2. Line a baking tray and put the whole block of feta on and drizzle with oil, a pinch of black pepper and place the rosemary on the top. Put it in the oven for 10 minutes till wonderfully soft.
  3. Make the dressing by putting ingredients into a blender and blend until smooth or you can do in a glass by whisking with a fork until creamy.
  4. To serve, mix the parsley and lemon juice through the brown rice with a pinch of pepper and salt, and a drizzle of olive oil. Mix through the radishes and put the warm feta on the top. Lastly, drizzle with the tahini dressing.
