Gluten Free Bread Sauce


There is nothing like deliciously thick bread sauce with a roast.

A note about this recipe is that shop bought gluten free sliced bread can be very sweet. Therefore try to buy good quality gluten free bread from a bakery. If your sauce is tasting sweet, just keep adding a little more salt and pepper until you feel the flavours are balanced and you have reached that gently spiced savoury point.

Bread sauce freezes really well if you are feeling organised, get a big batch made up ahead of time – you will find that the flavours really develop over time.

½ a white onion
7 whole cloves
4 whole peppercorns
2 bay leaves
Generous pinch of salt
140g gluten-free bread, torn into strips
325ml rice/almond milk


1. Peel the onion and push the thin point of each clove into the onion so that it looks a little bit like a hedgehog. Put the onion into a pan with the remaining ingredients. Place the pan over a medium heat and gently simmer for around 30 minutes until the bread has completely broken down and you have a lovely thick sauce. If the sauce looks too thick, just add a little more milk to loosen it.
2. Depending on the bread you are using, you may need to cook the sauce for slightly longer. If so just continue to simmer over a medium heat, adding a little more milk and stirring occasionally so that it does not stick to the bottom.
3. Serve warm or freeze for later.
