Mushroom Coconut Soup

Nothing more perfect than a warming soup to end the day. This is so simple to make using a Vitamix it takes 5 minutes to make, blend and serve piping hot.

Ingredients

400ml coconut milk
200g button mushrooms
1 tbsp boullion powder
2 cloves black balsamic garlic
120g butterbeans
¼ tsp tamari
1tsp tahini
Cracked pepper

Optional Garnish: Pan fried field mushrooms

Method

Wash the button mushrooms and take the stem out.

Put the coconut milk, cleaned mushrooms, boullion powder, black garlic into the blender and blend on number 6 for 1 minute.

Add the butterbeans, tamari, tahini and cracked pepper and blend for 5 minutes on number 9 until silky smooth and piping hot.

Optional pan fry some left over mushrooms for a mouth watering garnish.
