Spinach & Pearl Barley Risotto
It’s so easy to whip up this delicious risotto when you get home from work – just remember to stir stir stir to make it creamy!
As you will see in the recipe, you can substitute the spinach purée for a delicious, deep red beetroot puree. Try also roasting tomatoes to squash over the top for a burst of sweetness!
