Spinach & Walnut Pesto

“This recipe is alkaline nutrition summed up!

Greens, nuts, herbs, spices and lots of flavour. Pesto is one of the best ways to jazz up your vegetables, and by adding walnuts to this recipe, you are delivering the body with a fantastic dose of protein and omega rich brain food.

If you make a big batch and freeze in ice cube trays so that in the case of a hunger emergency you can just pop them out and heat it up and add to pasta, rice or quinoa for a more nutrient rich meal.”

Ingredients

70g spinach
15g parsley
100g walnuts
4tbsp chia or olive oil
Pinch Himalayan pink salt
1tsp sumac
1tbsp nutritional yeast

Method

  • Put all the ingredients into a blender and blend until a rough texture.
  • Serve with pasta, crudités, spread onto pizza, in your sandwich, toppings your veg, or however you like!
