Strawberry Gazpacho

Ingredients

100g strawberries, green tops removed
130g red pepper, deseeded
200g tomatoes
120g cucumber, peeled
60g fennel, roughly chopped
1 small clove garlic, grated
1 tbsp olive oil
¼ tsp pink salt
¼ tsp brown rice vinegar
1 tbsp nutritional yeast
Juice of 1 lime
1 ½ cups of filtered water

Method

  1. Put all ingredients into a blender and blitz until smooth. Garnish with some cubed cucumber and slices of strawberries.
