Tempeh Stir Fry

This is a very quick and simple green stir fry using tempeh, it is a fantastic source of protein, and tastes a whole lot better than tofu!

It has a great texture and is brilliant in stir fry and stews. It has the power to turn any #meatfreemonday into a taste bud party – even for meat eaters!

Ingredients

2cm cubed piece of ginger, finely grated

1 large clove of garlic, finely chopped

1tsp coconut oil

1tsp ground coriander

60g beans

2 pak choi

70g broccoli

150g tempeh

2tbsp tamari

zest 1 lime

5g fresh coriander

10g cashews

Method

  • Melt the coconut oil in a large pan and add the grated ginger, chopped garlic, ground coriander and leave to sauté for 1-2 minutes.
  • Add ¼ cup of water and the tamari with the beans, broccoli and pak choi. Simmer for 3 minutes with the lid on.
  • Add the tempeh with the lime juice for a further 2 minutes with the lid off.
  • Serve with the lime zest and cashews and chopped coriander.
